Blackbelly was founded by award- winning Chef Hosea Rosenberg in 2011 as a high-end boutique catering and event company, with a food truck and farm. It has since evolved to include an acclaimed full- service dinner restaurant, breakfast and lunch café, and Boulder, Colorado’s only independent butcher shop licensed to make and sell house-cured meats. Through its evolution, the mission at Blackbelly has remained that: food will always start with seasonal, locally-grown ingredients, and pasture raised sustainable animals. The butchery team at Blackbelly, lead by Head Butcher Nate Singer, goes many steps beyond simply receiving products from its purveyors. They are involved in the feeding and raising programs of livestock ensuring they receive premium quality meat in low quantities and work closely with the purveyors to ensure finest quality. Please inquire about our south patio & garden and butcher shop space for group dining, cocktail parties, and special, family style menus! Covered with a canopy, and equipped with retractable windows and a heating system, this patio creates the perfect environment year-round. We can accommodate up to 40 people seated or 50 for a standing reception.
